Hélène is named after both the cheesemaker’s grandmother and the cheesemaker’s husband’s great-grandmother, who shared the same name. Hélène is little crottin (small cylinder or button) of gooey, mushroomy goodness. This cheese varies with the seasons: in the winter our cool cave keeps her rather firm but as the weather warms and the air hangs with humidity, Hélène becomes more oozy. Similar to a tiny camembert with tons more charachter her rind transforms over time from mild easy-to-please mushroomy to full-on earthy wildness.
Hélène is made from pasteurized Holstein and Jersey milk of our neighbors at Walnut Lane Farm in Dudley, MA and pasteurized Jersey milk from Greener Acres Farm in Mendon, MA. Please inquire about availability.
Note: As with European crottins, kept in its original wrapping, Hélène dries over time and become a hard, dense little button. This is normal and encouraged.
